Israeli Sweet and Spicy Hummus with Summer Vegetables

Ingredients:

  • 1 can chickpeas (garbanzo beans)

  • 1 clove garlic

  • Salt

  • Pepper

  • Olive oil

  • Water

  • 1 Tbsp. honey

  • ½ tsp. ground chipotle powder

  • 1 large cucumber, unpeeled, halved, seeded, and 1/2-inch diced

  • 2 C. cherry or grape tomatoes, halved 

  • 1 large (1/2-inch-diced) orange or yellow bell pepper 

  • 1/2 (1/4-inch-diced) red onion

  • Balsamic vinegar for drizzling

  • 1/4 C. julienned fresh basil leaves, for garnish

  • 3 8” pita bread, cut into wedges and lightly toasted, for serving
