Caprese Grilled Cheese with Tomato Basil Jam

Ingredients:

  • Sliced Sourdough Bread (20 slices)

  • 3 Fresh Tomatoes

  • 3 Cloves Minced Garlic

  • ½ cup Fresh Minced Basil 

  • Salt & Pepper, to taste 

  • 2 cups Granulated Sugar 

  • 1 1/2 cups Water

  • 20 Slices Mozzarella Cheese 

  • 2 cups Pesto (for spread)


Instructions:

  • In a saucepan, cook down tomatoes and garlic on low to medium heat till soft and tender, mix in spices and then wilt in basil, before adding water and sugar

  • Onions or shallots may also be added if desired

  • Reduce on low heat, simmering till desired thickness is reached

  • Build grilled cheese with sourdough, pesto spread, mozzarella and tomato jam

  • Sear in pan till cheese is melted
