Caprese Grilled Cheese with Tomato Basil Jam
Ingredients:
Sliced Sourdough Bread (20 slices)
3 Fresh Tomatoes
3 Cloves Minced Garlic
½ cup Fresh Minced Basil
Salt & Pepper, to taste
2 cups Granulated Sugar
1 1/2 cups Water
20 Slices Mozzarella Cheese
2 cups Pesto (for spread)
Instructions:
In a saucepan, cook down tomatoes and garlic on low to medium heat till soft and tender, mix in spices and then wilt in basil, before adding water and sugar
Onions or shallots may also be added if desired
Reduce on low heat, simmering till desired thickness is reached
Build grilled cheese with sourdough, pesto spread, mozzarella and tomato jam
Sear in pan till cheese is melted
Serves: 10
