Summer Salad

  • 1 bag pre-washed baby spinach

  • 1 C. blueberries, blackberries, raspberries, strawberries

  • ¼ C. toasted pecans

  • Goat cheese

  • Red onion, thinly sliced

  • Sea salt

  • Freshly cracked black pepper

  • Arrange the spinach on the plate and top with the remaining ingredients. Serve the citrus vinaigrette on the side.

Serves 2

Citrus Vinaigrette

  • ½ C. extra virgin olive oil

  • ¼ C. orange juice

  • 3 Tbsp. honey or agave (to taste)

  • 1/8 tsp. cayenne pepper (if desired)

  • Salt and pepper to taste

Shake all ingredients to emulsify.
