Stuffed Grape Leaves
Ingredients:
8oz Grape leaves, rinsed and drained, stems removed
½ Cup Long Grain Rice
¾ Cups Olive Oil
1 Onion Fine Diced
1 Cup Water
2 Tbs Lemon Juice
4 Tbs Chopped Parsley
1 Tbs Chopped Mint
1 Tomato Fine Diced (Flesh Only)
4 Cloves Garlic Minced
1 tsp Dry Mustard
1 tsp Dried Dill
S&P To Taste
Procedures:
In large saucepan saute onions, garlic, and tomatoes on low heat till aromatic and tender
Add rice and toast briefly
Combine water and lemon juice in pan with rice mixture, bring to a boil and let simmer for 6-7 minutes
Add herbs and spices, mixing well before allowing to cool
Rinse and dry grape leaves before removing the stems
Lay a leaf shiny side down and place a small amount of rice mixture in before rolling tightly, making sure that all edges are tucked in
Place in fresh pot, adding just enough water and lemon juice to cover the wrapped leaves, weighting down if needed
Cover and bring to a boil for roughly 35-40 minutes
Serve with lemon juice and/or tzatziki
Serves - 7 (3 stuffed leaves each)
