2 garlic cloves, minced
2 fresh 6″ rosemary sprigs, chopped
2 lemons, sliced
6 salmon fillets
Preheat oven to 425°.
Place salmon on a parchment-lined baking sheet.
Season with salt & pepper. Layer lemon slices on top. Sprinkle on rosemary & garlic. Drizzle with olive oil. Roast for 12 minutes or until the salmon is flaky. Drizzle again with olive oil.
Great served with wild rice and fresh veggies. Can also be frozen ahead of time.
