Buffalo Chicken Nachos


  • 1 rotisserie chicken, meat pulled and shredded

  • 1/2 stick butter

  • 1/3 C. hot sauce

  • 1/4 C. blue cheese, crumbled + extra for garnish

  • 1/3 C. mayonnaise

  • 1/4 C. heavy cream, half & half or milk

  • salt & pepper

  • 2 cloves garlic, minced

  • juice of half a lemon

  • 1 bag tortilla chips

  • 2 ribs celery, diced

  • 3 scallions, thinly sliced

  • 4 oz. Cheddar or Monterey Jack cheese


  1. Preheat oven to 375 degrees.

  2. In a large bowl, melt the butter.

  3. Pour in the hot sauce, mixing well.

  4. Add the chicken to the bowl and coat well with the sauce.

  5. Line a baking sheet pan with parchment or aluminum foil.

  6. Place the tortilla chips on the pan.

  7. Top with the seasoned chicken.

  8. In a separate bowl, combine the blue cheese crumbles, mayo, cream, salt, pepper, garlic and lemon juice. Mix well.

  9. Dot the chicken with the blue cheese mixture.

  10. Garnish with diced celery, grated Cheddar, scallions, additional blue cheese if desired.

  11. Place in a hot oven until the cheese melts (8-10 minutes).

  12. Garnish with a few splashes of hot sauce & enjoy!
